Chari's Spicy Roasted Sweet Potato and Black Bean Salad

Amount Measure Ingredient
1 cup red bell peppers -- diced
1 cup yellow peppers -- diced
1 cup red onions -- diced
2 cups frozen sweet potato -- diced
1 15.5 oz. canned black beans -- rinsed and drained
1/3 cup fresh cilantro -- chopped
1 teaspoon cumin
1/4 teaspoon smoked paprika
3 tablespoons orange juice -- half the sugar
2 tablespoons fresh lime juice
1 chipotle chile canned in adobo
3 tablespoons extra virgin olive oil
1 tablespoon agave nectar
1 teaspoon garlic -- crushed
1 teaspoon extra virgin olive oil
On a sheet pan , roast red peppers, yellow peppers and onions in 1 teaspoon EVOO for 15 minutes. Add frozen sweet potatoes and continue cooking 10 more minutes.
In a bowl , combine 3 tablespoons EVOO, cumin, smoked paprika, orange juice, lime juice, 1 chipotle chile and some of the adobo sauce, agave nectar and crushed garlic. Whisk together and add cilantro.
Toss dressing with beans and other ingredients.
Serve at room temp. and refrigerate unused portion.
